YAY, today is National Coffee Day and I want to celebrate with a recipe for my Low Calorie Double Shot Latte. You all may know that I recently started Nutrisystem Blogger Program (I am getting the system for free in exchange for my honest feedback), which means I need to cut out a lot of calories, fats and sugars from my diet. One of the things they allow you to have in the program is coffee, albeit low calorie coffee. I have been loving the Starbucks Verismo machine from Staples because I can create my perfect coffee-shop-quality morning beverage at home, in my pjs! Today I am going to share with you how to do the same. AND stay tuned to find out how you can win one of these fantastic machines for yourself. Hint: I am giving away 3!
Coffee itself isn’t high in calories, so the way I am saving calories is by creating my own simple syrup. I prefer simple syrups over dry packets of sweetener because it really does mix into the liquid easier. So before I tell you exactly how to make my Low Calorie Double Shot Latte I actually need to show you how to create the Low Calorie Simple Syrup. It is so dummy-proof that I should call it the “Stupid Simple Syrup”!
For this recipe you only need 1/2 cup of stevia (I used Truvia), 1/2 cup of water and 1 teaspoon of vanilla extract. I used the vanilla extract with NO corn syrup included. Be sure to read the label of your vanilla extract because that will make a world of difference.
Mix the water and the sugar into a small saucepan. Put it on the stove and bring it to a boil. It will look a little cloudy at first, but once it is ready it will be perfectly clear. Then add in your teaspoon of vanilla and whisk that in so that it is evenly mixed. VOILA! You have your very own vanilla simple syrup. You can honestly add in any flavor you want, vanilla just happens to be my favorite. At that point, you are ready to add it to any of your recipes that call for a simple syrup.

Kinda awesome AND easy right? I love it. I am extremely excited that I can still enjoy a fabulous Latte without using up all of my extra calories for the day. If I did my math right, each cup of coffee is less than 10 calories this way! SCORE!
